Yummy Acai Bowl

Acai BowlMake this bowl once and you’ll be hooked! It is supertasty and especially good to have after a workout. Acai is officially known as the Brazilian superfruit, because of its super high antioxidant content. It is also one of the few foods providing us with Omega-9 fatty acids, helping to control blood sugar. If you can’t visit Rio De Janeiro, at least you’ll feel like you’re eating there.

Ingredients
  1. 2 frozen bananas
  2. 2 Acai smoothie pack ( I like the Sambazon brand)
  3. splash of coconut water or almond milk, just enough to get it moving
  4. ½ cup strawberries, blueberries, raspberries, blackberries, mango or mix of any
  5. 1 tbsp mulberries
  6. 1 tbsp unsweetened coconut shreds
  7. 1 tbsp goji berries
  8. 1 tbsp almonds
Instructions
  1. Take out your bananas from the freezer and let them sit for a few minutes so they are not quite as hard. Add them to your blender or food processor, along with the acai smoothie pack, and splash of coconut water or almond milk. Blend until smooth. Use your Vitamix plunger tool to help keep it going. You are looking for a soft serve ice cream consistency, not a smoothie consistency.
  2. Using a spatula, divide between two bowls. (You can store the second bowl in the freezer, and defrost the next day, on the countertop, until you can stir it.)
  3. Top the Acai mixture with the fruit you chose, mulberries, coconut shreds, goji berries and almonds. Enjoy immediately!
