 Happy Thanksgiving!  

This week, I’m all about Cranberries!  Why?  Because Thanksgiving time gives us the opportunity to eat one of the most powerful foods on the planet.  Yup.  The humble little cranberry.  Cranberries are water harvested, meaning they float on water until they are harvested.  This direct and constant exposure to sunlight helps the cranberries develop greater concentrations of anthocyanins – powerful antioxidants – that provide us with disease fighting benefits. 

I am dedicating this weeks’ post to the humble cranberry and giving you three simple recipes that highlight the delicious and powerful benefits of it.  

First up, the base recipe you will use for the next two:  The Best Ever Cranberry Sauce.  Once you make this, you will never go back to the can.  Plus, it’s a completely raw recipe!

Ingredients
  1. 2 cups fresh Organic cranberries
  2. 2 Oranges, peel and pith removed
  3. 4 Medjool dates, pitted
  4. 1/2 tsp vanilla extract
  5. Honey or maple syrup to enhance sweetness
Instructions
  1. In a food processor, add the cranberries, oranges, pitted dates, and optional vanilla.
  2. Process until the mixtures is well combined and the dates have been well incorporated.
  3. Taste for sweetness. If the sauce is too tart, add a tablespoon or two of honey.
  4. You’ll never go back to the can again!

What to do with leftover cranberry sauce? Make a cranberry smoothie!

To your blender, add: 
1 cup cranberry sauce
1 pear
1 cup almond milk or coconut milk
1/2 cup ice

Blend until smooth
 

Recipe #3  
What to do with leftover cranberry sauce? Make a Roquefort-Cranberry Bite.

You will need:
1 cup  cranberry sauce
4 oz. Roquefort cheese
2 heads Belgian endive

Clean and separate endive leaves.  Place one teaspoon Roquefort cheese in the endive leave and top with 1/2 teaspoon cranberry sauce.

Serve this at a party or bring to a party !  It makes a beautiful dish.
